Many of you have probably made a good breakfast burrito before. But...what about one with leftover Chinese food?
I had a ton of homemade "char siu" (Chinese bbq pork) left over from ramen the night before, and decided to make a crispy Chinese-inspired breakfast burrito!
Ingredients:
*Chinese bbq pork, diced (3-4 tbsp)
*2-3 eggs, depending on the size of your tortilla
*Splash of milk
*Flour tortilla, the same size as your skillet of choice
*Butter for light frying
*3-4 tbsp spring onion, chopped
*Hot mustard of choice
*Black or white sesame seeds
*Salt and ground pepper to taste
1. Begin by preheating your skillet over medium heat. Beat your eggs with a splash of milk, and season with salt and pepper (I know...normally you wouldn't put salt into the eggs prior to cooking, but with this method, it works). Spread a generous amount of mustard onto one side of your tortilla (the flavor will lessen during the cooking process).
2. Add butter to your skillet. Pour the eggs into the skillet and coat the bottom with them, like a crepe. While the egg is still runny (quickly!) add your fillings (pork, spring onions, sesame seeds) to the egg, sprinkling them around evenly.
3. Lay your tortilla, mustard side touching the egg, into the frying pan on top of your egg. Press it in with your spatula (just enough to help them make contact...you don't have to smash). Cook until you can shake the pan and the egg slides back and forth freely.
4. Carefully flip the entire thing over so that you can fry/crisp your tortilla. This should take maybe a minute or two, max.
5. Slide the burrito onto a cutting board and allow it to cool slightly (just a minute or two). While still warm, roll the burrito. Doing this while the burrito is warm helps it to keep its rolled shape, because it's a full burrito!
