As a Lebanese that is now living in Tuscany, food has always been a central part of my daily rituals. In both Lebanon and Italy, friendships and family bonds are created or strengthened around delicious, home cooked, traditional meals. So it is natural that food has always played an important part in my life and in the memories I have. Lebanese and Italian cuisine, the former with it's fresh mediterranean ingredients and the latter with its great variety and cultural influence, are a big part of my personal identity. When I was as young as two years old, I'd spend many hours a week in the Pizzeria "Le Nautique" that my father had opened, which was the only one in the ancient Phoenician fishing town of Byblos in Lebanon. Today, our family restaurant "Osteria dell'Olio", in the historic center of Florence serves traditional tuscan cuisine to both tourists and locals. We try to give people visiting this unique city a good understanding of the local culinary culture through the traditional dishes and ingredients. I believe that food is powerful tool for discovery, allowing the individual to truly discover the way that different people live around the world. When traveling, it is an essential way to truly understand the history and culture of that nation. I'm passionate about exploring new cultures and meeting new, like - minded people and food is a powerful tool to enable those experiences. WGS is a way for me to network with individuals from different backgrounds and stories, sharing experiences around a common interest for food. Through WGS I wish to explore the world one bite at a time. Italiano: Da libanese che ora vive in Toscana, il cibo è sempre stato una parte centrale della mia routine giornaliera. Sia in Libano che in Italia, le amicizie e i legami famigliari si creano e si rafforzano intorno a un buon pasto tradizionale. E' normale che il cibo ha sempre avuto un ruolo importante nella mia vita e nelle memorie che ho. La cucina libanese e quella italiana, la prima con i suoi ingredienti mediterranei freschi e la seconda con la sua vasta varietà attraverso tutta la penisola, sono una parte importante della mia identità personale. Quando avevo appena due anni, passavo diverse ore della mia settimana nella pizzeria "Le Nautique" che mio papà aveva aperto, che era la prima nell'antica città fenicia di Byblos in Libano. Oggi, il nostro ristorante di famiglia "Osteria dell'Olio", nel centro storico di Firenze, prepara cibo della tradizione toscana e serve sia turisti che gente del posto. Cerchiamo di dare alle persone che visitano la città una buona comprensione della cucina tradizionale fiorentina attraverso gli ingredienti tipici. Credo che il cibo è uno strumento potente per esplorare il mondo, permettendo a individui di scoprire i modi diversi di vivere in tutto il mondo. Quando viaggio, è uno strumento potente per scoprire la storia e la cultura di quella nazione. Sono appassionato dall'esplorare nuove culture e incontrare persone interessanti e il cibo è uno strumento che permette di farlo. WGS è un modo per me di conoscere persone con storie e origini diverse dalle mie, condividendo esperienze intorno ad un interesse comune per il cibo.
